Discussed with PIC having unit serviced so that condensate does not leak onto shelving and food items. All equipment must be maintained in good repair at all times. Inspector notes: Observed wares being sanitized in the 3-compartment sink in a solution of sanitizer that measured over 400 ppm quaternary ammonia on quaternary ammonia test strips. Manufacturer instructions on container of sanitizer stated that proper concentration should be 150-400 ppm quaternary ammonia. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Ensure sanitizer is diluted to proper levels, as measured on quaternary ammonia test strips, until chemical dispenser is fixed. PIC started servicing chemical dispenser during time of inspection
