Inspector notes: Observed multiple sanitizer buckets being used to sanitize wares and hold wet wiping cloths with sanitizer solution concentrations of over 500 ppm quaternary ammonia as measured on test strips. Quaternary ammonia sanitizer solutions should have a concentration of 150-400 ppm as per manufacturer recommendation. Discussed with PIC diluting sanitizer solution and checking concentration with test strips to ensure solutions measure 150-400 ppm quaternary ammonia. PIC called for service of the sanitizer dispenser at time of inspection. Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020
