Inspector notes: Observed high-temp mechanical dishwasher with a maximum temperature reading of 156.2'F via min/max thermometer. Discussed routine maintenance with PIC. Establishment will discontinue use of mechanical dishwasher until repairs are made, PIC set up 3-comp sink to handle warewashing activities at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Observed dripping faucet at food prep sink. Person-in-charge (PIC) stated they were aware and already had work order placed to repair leak. Must repair all plumbing to a state of good repair prior to next routine inspection
