Improper cooling methods used (corrected on site)
Inspector notes: Observed some cooked and cubed tofu chunks that were in a small, approximately 6-inch deep covered plastic container inside of a metal cabinet inside of the walk-in cooler. The internal temperature of the tofu cubes as measured using a probe thermometer ranged from 51°F - 55°F. According to the person in charge, the tofu had been cooked and began cooling approximately 1.5 hours prior to the temperature assessment. Discussed with person in charge that foods that are cooling down should be stored uncovered on a wide, flat shallow pan placed up high inside of the walk-in cooler at a depth of less than 4 inches deep. Person in charge had the tofu transferred from the deep container to a flat uncovered pan and was allowed to finish cooling inside of the walk-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
