Inspector notes: Observed employee rinse hands in three compartment sink using spray hose after handling raw chicken and proceeding to handle deli meats for customer. Other TCS foods had a rise in temperature and employees were instructed to use cooling rack for cooling purposes to prevent increase in TCS foods that are not in the process of cooling
