Inspector notes: Observed cooling sweet potatoes with internal temperatures measured between 66-61*F and green beans at 50-55*F in tightly covered plastic containers with 8"+ of cooling foods inside. Per PIC, the foods were aircooled and then placed in the walk in approximately 30 minutes prior. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Advised PIC to air cool prepped foods on the sheet pans they were cooked on then moved the air cooled pan into the walk in on the speed rack to more quickly cool before consolidating into bulk containers

Inspector notes: Observed a buildup of black and tan organic growth on the underside of the ice production area of the ice machine. All food-contact surfaces must be cleaned to sight and touch. Clean ice machine and maintain a regular cleaning frequency to prevent buildup
