Inspector notes: Prep table was holding ambient air temperature of 49-51*F at time of inspection. PIC made a service call at time of inspection and was able schedule a technician to come out on Monday. Until repairs are completed TCS foods will use time as a control for food safety and will be switched every 4 hours. Will re-inspect on 3.25.26 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
