Inspector notes: Sanitizer buckets with wiping cloths inside found with Quat Ammonia sanitizer at a concentration over 400 PPM. PIC dumped the sanitizer buckets. The sanitizer dispenser is not working and sanitizer is being mixed by hand. PIC had the sanitizer basin of the 3 compartment sink filled with water and mixed Quat Ammonia sanitizer to a concentration between 200-400 PPM and filled each bucket with it. Please ensure sanitizer is used at proper concentration when storing sanitizer wiping cloths or sanitizing food contact equipment/surfaces
