Inspector notes: Observed recently prepped sliced tomatoes cooling in the top of the sandwich dresser cooler with an internal temperature of 49F. According to PIC and label, the tomatoes were sliced within the hour prior to inspection. Also, the amount of sliced tomatoes cooling in the prep cooler would not be used within 4 hours. TCS foods must cool from 70-41F within 4 hours. PIC placed most of the sliced tomatoes into the walk-in to cool to 41F and left the amount need immediately in the prep cooler. Discussed cooling TCS foods in the walk-in cooler, in a shallow container that is loosely covered until it cools to 41F or less. The top of the prep cooler and a large amount of sliced tomatoes would not likely cool the food to 41F in 4 hours
