Equipment lacks capacity to maintain safe food temperatures
Inspector notes: Main, and only, Walk-in cooler holding at 47*F upon inspector's arrival and throughout duration of inspection. TCS food items such as sliced cheeses and other dairy products in the walk-in had temperatures of 45*F during inspection. PIC stated the food items were checked last at 6:00 AM and was at 41*F while the ambient temperature was at 45*F at the same time. PIC thought maybe the door was left open during delivery this morning and was waiting for it to cool back down. PIC moved the TCS food items into the other coolers and freezers for cooling and continued cold holding. The walk-in will not be used for cold holding TCS food products until it is able to maintain a temperature of 41*F or below. PIC contacted repair technician to service the unit. The walk-in cooler is needed to continue to normal operations and be able to hold new shipments of TCS food items. Please have the walk-in cooler repaired/replaced and able to maintain an ambient temperature of 41*F or below prior to re-inspection within 10 days. ***2nd consecutive violation***
