Inspector notes: Observed pan of raw portioned beef in reach-in drawers under cooktop with an internal temperature of 60*F when measured with a probe thermometer. According to manager, beef was prepped and placed in drawer 20 minutes prior. Discussed moving all prepped items to the walk-in to cool to 41*F and below before being placed in reach-in units on the cook line. Beef was moved to walk-in at time of inspection
