Inspector notes: Observed a sealed plastic container with cooked chicken with an internal temperature of 101*F. Internal temperature registered with an internal probe thermometer. Per PIC the chicken was cooked to temperature, removed from hot holding, and placed on counter to cool. PIC stated an employee transferred chicken to container, sealed with a lid, and placed in reach-in refrigeration unit greater than 2hrs prior to time of inspection. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Educated PIC that when cooling food, all containers should be open topped, shallow containers, to allow for rapid cooling. Corrected at time of inspection

Inspector notes: Observed TCS food items in hot holding steam table at 76*F, registered with an internal probe thermometer. Per PIC the food items were placed in hot holding table an hour and a half prior to time of inspection. TCS food items were prior cooked then cooled carne asada. Educated PIC that TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. PIC relocated food items to grill top for rapid heating to 165*F before placing in hot holding. Corrected at time of inspection
