Per PIC, the tongs were not cleaned after yesterday's service. Discussed cleaning frequency with PIC. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Also observed white cream sauce labeled with an expiration date of 8/11/2025 at time of inspection. Discussed revising and adhering to a standard date-marking system with PIC.
