Inspector notes: Observed a large metal pot of soup at 120*F after 20 minutes of cooling in a small reach in unit. Unit was small and not designed for cooling. Soup was moved to larger reach in to help it cool quicker. Observed a container of spicy ground tuna at 68*F in the prep table. Prep tables are not designed to cool foods. Once foods are prepared, they should be cooled rapidly prior to being placed in prep units for use. Tuna was moved to freezer to rapidly cool prior to returning it to the prep line
