Inspector notes: Observed nacho cheese sauce at the nacho cheese and chili dispenser with an internal temperature as measured using a probe thermometer of 109°F. The unit did not have chili in it. Per the person in charge, it appears that the unit is not working properly. Person in charge embargoed the nacho cheese sauce and put in a work ticket to have the unit serviced and/or replaced. Person in charge will not put any food in the unit in the meantime and put an "out of order" sign on the unit until it is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
