Inspector notes: Observed kolaches with hot dogs in the bottom of the bagel prep table unit with an internal temperature of 54*F measured with a probing thermometer. Per PIC the kolaches were cooked left out for 30 minutes and then placed in that bagel prep unit. Discussed with PIC the bagel prep table is not an adequate cooling refrigerator. Also discussed TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Worked with PIC to create a Time as Public Control policy for the Kolaches, Jalapeno cream cheese pastry and for the pepperoni croissant

Inspector notes: Observed several bagel utensils, wooden sticks for doughnuts and rolling pins stored use with white powdery product next to and above clean utensils. Per person in charge (PIC) the utensils are only there temporarily until they get cleaned by the end of the day. Discussed with PIC all food-contact surfaces must be stored cleaned to sight and touch. Used dirty equipment shall not be stored above or next to clean equipment. PIC took the used utensils to the dish area and cleaned up the shelving
