Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Soups had been placed and replenished in the steam since the lunch rush around 11am. Person in charge discarded soups at the time of the inspection. The steam well will be serviced, and all soup will come from the steam well on the cook line that is working effectively
