Inspector notes: At time of inspection, observed Y-valve or side kick attached to mop sink faucet that has an AVB; one side was connected to a hose that was hanging in the mop sink. Explained to PIC that the AVB valve is not designed to be continuously under pressure and that there shouldn't be any obstructions downstream from the AVB valve. This could result in the backflow prevention device to fail. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection

Inspector notes: Observed establishment brewing cold brew at room temperature at time of inspection. Per PIC, after the 24 hour brew, the cold brew is moved to the reach in cooler and date marked. Unless under a variance/HACCP, cold brew can not be brewed at room temperature. Inform PIC, that if the establishment wishes to continue brewing cold brew that it will be brewed, dispensed, and held at 41F or below. PIC moved large pitchers of the cold brew to the reach-in cooler to continue brewing. PIC reached out to management on what the establishment is going to do going move. A variance/HACCP must be obtained prior to conducting any specialized processes.
