Inspector notes: Observed ceaser salad 58*F, stromboli, pepperoni slices of pizza, stromboli combo with an internal temperature of 78*F. According to logs, time as a control is used, but last batch of TCS foods were documented at 9:30AM. PIC stated items had been rotated within the last hour and documented proper time. Must provide written time as a control procedures. All TCS foods being held under time as a control were properly time stamped at time of inspection.
