Inspector notes: Observed employee move cutting board used to cut raw chicken with visible raw chicken pieces still on board then without washing hands, touch the handle of a wok and continue cooking food. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. PIC instructed employee to wash hands at the time of inspection

Inspector notes: Observed cooked steak 110*F-123*F and chicken egg rolls 118*F-125*F in steam table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated TCS foods had been in the steam table for less than one hour and discovered there was not enough water in the steam table. All TCS foods improperly hot held were reheated to 165°F at time of inspection
