Inspector notes: Observed green enchilada soup(111'F) being held hot in a steam warmer next to the drive-thru window. PIC explained that the commercially packaged soup had been reheated to 135'F prior to being placed in the warmer about 1 hour prior. Temperature of water(156'F) inside the steamer was measured with probe thermometer at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection
