Inspector notes: Observed scrambled egg, cooked diced potatoes, and cooked bacon bits with internal temperatures of 115*F to 132*F in steam wells in center of prep line. Person in charge (PIC) stated food items stay in steam well for 4 hours - the length of time breakfast is served. Discussed with person in charge that hot foods must be hot held at 135*F and above at all times. Breakfast time ended during time of inspection and food items were voluntarily discarded. Recommended using time as a control until steam well is repaired. Soups are placed in steam well during the rest of the day and discussed with PIC that soups must be marked with a start and end time not exceeding 4 hours
