Discussed with PIC all food must be in good condition, safe, and unadulterated. All adulterated food was embargoed and PIC discarded at time of inspection. Discussed to not store food under the dripping pipe in the walkin to prevent further contamination

Inspector notes: Observed in the fruit and vegetable prep kitchen in the back of the facility an employee rinsing then stacking grey empty lettuce totes with the sprayer from the lettuce prep sink that is next to the three compartment sink that uses quaternary ammonium. Per employee the totes are cleaned by rinsing in the lettuce prep sink. Discussed with Person in Charge (PIC) Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturer's specifications. Proper washing of food contact surfaces shall be to soap, rinse, sanitize, and thoroughly airdry before stacking away as clean. Employee washed the grey totes properly at time of inspection

Discussed with PIC swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. All food must be in good condition, safe, and unadulterated. Also observed a pinkish orangish liquid dripping from pipes along the ceiling walkway in the back of the facility between dairy walk-in and alcohol cages. Discussed with PIC to clear out the frozen liquid, repair/fix/replace the unit and to not store food under the frozen liquid. Per PIC a work order was in place for the pipes
