Inspector notes: Backed chicken in the cooking area is being packaged at 120-125 degrees F to be held under the heat lamp. The manager advised the food handler to reheat the food to more than 165 F, then keep the food under the heat lamp since the equipment can hold the temperature and not raise the temperature. Chicken wings cooked an hour ago in two containers were held at 127-129 F under the heat lamp. Too much food is piled up in the containers only the top part has lost temperature. The manager advised the employee to keep less food in the containers under the heat lamp. Food items were reheated to 165 degrees F. Corrected at the time of inspection
