Inspector notes: Observed active warewashing of food contact surfaces including piping tips at three-compartment sink with a quaternary ammonia concentration at 0ppm. Employee stated sanitizer had been replaced approximately 10-20 minutes prior, but had not been tested with sanitizer test strips. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection

Discussed with PIC sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection. Also observed the connected sprayer is leaking when not in use and missing or rusted ceiling tiles above the dishwasher. Discussed with PIC to replace/repair to create a smooth cleanable surface and equipment shall b maintained in good rapair at all times
