Also observed raw ground pork sausage stored over raw whole beef in the walk-in cooler in the meat department. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Instructed PIC to arrange raw meats based on final cooking temperature at the time of inspection

Inspector notes: Observed freezer storing frozen food at 34.1*F per min/max thermometer at the time of inspection with previously frozen chicken breast at 28*F and raw bacon wrapped jalapenos 28*F at the time of inspection. Stored frozen foods shall be maintained frozen unless in the process of slacking or thawing. Per employee, freezer door was ajar when they came in to work and some frozen foods were still frozen and some TCS foods close to the open door had begun the thawing process. PIC moved frozen food to alternative freezer or refrigeration units at the time of inspection
