Inspector notes: Observed drain lines from both 3 bay sinks leaning into the floor sink. Person in charge (PIC) trimmed drain lines to ensure one inch minimum air gap above the floor sink flood rim. All plumbing must be maintained in good repair at all times. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation

Inspector notes: Observed sanitizer level in three-compartment sink had a quaternary ammonia concentration of 0ppm. Sanitizer compartment had water in sink at time of inspection. Person-in-charge (PIC) replaced empty sanitizer bag with a new one at time of inspection. Upon retesting, sanitizer had a quaternary ammonia concentration of 200ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels
