Inspector notes: Observed the ambient air temp in the hot case at 135*F when measured with a min/max thermometer. TCS foods inside the cooler were observed holding between 109-170*F inside the hot case when measured with a probe thermometer, including: grilled chicken at 109*F, chicken wings from 120-124*F, and chicken tenders at 122*F. Per PIC, the foods had been cooked less than 1 hour prior. PIC provided cooking time logs. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Advised PIC to utilize time as a control or have the unit repaired/replaced
