Inspector notes: Observed TCS foods such as green sauce and raw beef and chicken stored in the walk-in refrigerator that was measuring with an ambient temperature of 55 degrees F. These items measured between 49-51 degrees F internally. They were recommended for discard. Discussed cold holding requirements. Alternative adequate refrigeration is not available- a re-inspection will be required within 5 days. Temporary solution of opening adjoining freezer door to cool walk-in will be utilized for now
