Those items were lasagna, cooked chicken wings, precooked chicken, in house made ranch, cooked meatballs, and ricotta cheese. Discussed with PIC RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Also observed several different types of cooked pasta in the prep table that did not have any date marks. Per PIC the items were made on the previous date. Discussed with PIC to date marked all cooked pastas for 7 days if cooked al dente or all the way. PIC placed date marks on the cooked pastas at the time of inspection
