Inspector notes: Observed employee washing and rinsing food contact surfaces without sanitizing after. Also observed employee drop a chocolate scraper on floor and place in apron without sanitizing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. All food-contact surfaces must be cleaned to sight and touch. Had PIC set up three-compartment sink with 50ppm of chlorine sanitizer at time of inspection. Food-contact surfaces were properly sanitized at time of inspection

Inspector notes: Observed two bottles of Roach and Ant killer spray located under three-compartment sink. Per person-in-charge (PIC), roach spray is used on floor coves and under equipment (behavior not observed at time of inspection). All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection
