Person in charge (PIC) states they had removed items from refrigeration one and a half hour before inspection but had no time stamp available to show, whether on paper or stamped on the container. PIC has a time as a control policy for their pupusas fillings in the establishment. Explained to PIC that a Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control AND time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection

TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Splash guard protects adjacent prep sink from any contamination when handwashing sink is in use. Prep sink was not in active use at time of inspection and PIC was using plastic lid as barrier in the mean time. PIC states it had recently broken and owner has been notified. Must repair all plumbing to a state of good repair prior to next routine inspection
