Per PIC, items were cooked and placed in the walk-in at 9:30 pm the previous night, over 6 hours from time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Discussed proper cooling methods with PIC, including cooling soups in shallow pans (less than 4 inches deep) and placing cooling containers on top shelves in front of the walk-in fan to encourage faster cooling.
