Inspector notes: Observed chicken hearts in frozen vacuum sealed packaging in reach-in freezer. At time of inspection items were vacuum packaged in house and were removed from packaging at time. Educated PIC that all vacuum sealing must be conducted under a variance/HACCO. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz energovweb.tylerhost.net/apps/selfservice#/home. Inspector notes: Observed an in-use ice machine with black, slimy, organic-like material growing behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse.
