Discussed with PIC that non-continuous cooking requires prior approval of written procedures. Provided time as a control guidance documents to PIC at time of inspection. PIC instructed staff to fully cook all chicken at time of inspection. Discussed with PIC discontinuing non-continuous cooking until procedures are written and approved

Inspector notes: Observed vacuum packaged raw beef, raw fish, and cooked beef in walk-in freezer. Per cook: items were prepped by establishment, vacuum packaged by establishment, and frozen immediately. Items were all packaged more than 48 hours prior to inspection. Discussed with PIC that vacuum packaging TCS items for over 48 hours, if freezing, requires a variance. Discussed limitations for vacuum packaging fish with the PIC. The vacuum packaged fish was embargoed at the time of inspection. PIC was instructed to open all other vacuum packaged items and remove from reduced oxygen environment. A variance/HACCP must be obtained prior to conducting any specialized processes.
