Inspector notes: Observed raw chorizo on a shelf above deli ham slices and shredded mozzarella cheese. Person in charge (PIC) moved the chorizo to the bottom shelf at time of inspection. Discussed proper storage and cooking temps with PIC. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed no date markings on the desserts (3-milk gelatins, flan cups, and flan cake) in the cold-holding unit near the front counter. Person in charge (PIC) stated the desserts were made 3 days ago and placed dates on the containers at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Inspector notes: Observed a bottle of over-the-counter medicine on a shelf above the reach-in cold-holding unit. Person in charge (PIC) moved the medicine at time of inspection. All medicines must be stored away from food, utensils, and single service items to prevent contamination. All medicines were relocated and properly stored by PIC at time of inspection
