Inspector notes: Observed multiple instances of employee washing hands after handling raw chicken without using soap. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Instructed employee to properly re-wash hands using hand soap

Suggested to PIC that someone else get a Food Protection Manager Certificate as back up, for instances like today. Inspector notes: Observed two copper pipes in the mop sink with less than a one-inch gap between the opening of the pipe and the lip of the mop sink. One pipe is on the left back wall and the other is on the front left. Informed PIC that these pipes need to be cut to be at least one inch above the mop sink lip by next routine inspection. Observed two copper drainpipes inside the floor drain by the walk-in fridge. Informed PIC that the pipes need to be lifted and secured so that their mouths are not less than one inch above the mop sink. Discussed the importance of backflow prevention with PIC. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection

Inspector notes: Observed that the backing of the mop sink wall with shelf attached to it became unscrewed and left a big opening. Discussed repairing the wall with PIC. PIC stated that there is a work ticket put in for it already. Observed accumulation of debris on mop sink floor and drain. Discussed cleaning out the mop sink on a regular basis with PIC to prevent heavy debris build up. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Physical facility must be maintained in good repair at all times.
