Inspector notes: Observed croissants stuffed with meat and cheese stored in the front case. Per PIC, time as control is utilized for safety. The tray of croissants did not have a time sticker to indicate start/discard time. The croissants had been in case for approximately 2 hours and time sticker was placed on the tray. Reviewed time as control documentation

Inspector notes: Observed various TCS food products such as sauces, cut vegetables, and deli meat measuring with internal temperatures ranging between 47-50 degrees F. The prep refrigerator the food was stored in measured with an ambient temperature of 51 degrees F and was known to not be in good working repair. The food had been stored in the unit for less than 3 hours and was moved to alternative refrigeration immediately. Discussed cold holding. Prep refrigerator required for flow of business. Temporary alternative refrigeration available to operate. A reinspection will be conducted within 10 days. This unit will not be used to store TCS food products until in good repair
