Equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Discussed increasing ice machine cleaning frequency. Please clean ice machines as frequently as necessary and prior to the next routine inspection

Inspector notes: Observed multiple clean steam table/hotel pans stacked near the ware washing area. When separated, clean water was observed in between the pans and pooled on the underside of rim. Discussed using the metal drying racks to store the containers in a self-draining, tilted and inverted, position that allows air drying. Items must be allowed to drain and to air-dry before being stacked or stored. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow. Instructed the person in charge to separate pans and allow them to air dry at time of inspection
