Inspector notes: Observed two in-use "mini" size combi ovens with self-cleaning chemicals in kitchen without a reduced pressure zone (RPZ) backflow preventer at the water supply line. Per manufacturer's installation guide, backflow prevention is required at the water supply line for this equipment. Per person in charge, units were not installed during recent remodel activities and have been in use for some time. Provided education on backflow requirements for cooking equipment - establishment has active remodel permit EHP2503213. Please install an ASSE 1013 RPZ backflow preventer at the water supply line for the stacked combi ovens with the drain line for the RPZ leading to the nearest floor drain with a 1-inch air gap

Inspector notes: Observed large soda syrup spill in the soda dispensing room in the back of house. Boxes of to-go cups were being stored directly on top of the spill at time of inspection. Discussed cleaning frequency with PIC. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection

Inspector notes: Observed employee lunches and open cans of energy drinks stored in the walk-in cooler directly over RTE beverages. Discussed designating a lower shelf and large cambro with a label as a space for employee food to be placed while preventing contamination to food/beverage beneath. PIC moved food and beverages to a safe storage are at time of inspection
