Establishment had not measured sanitizer with a chemical test strip and had only lactic acid/DDBSA or chlorine test strips available. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (200ppm per establishment's quat). PIC emptied and refilled the 3 comp sink at the time of inspection.
