Inspector notes: Observed some pre-cooked meatballs in hot well on line at 125*F-134*F and some above 135*F. Per person-in-charge (PIC), meatballs are reheated to 145*F-155*F and then placed in well. Per PIC, meatballs had been in hot well for approximately 1.5 hours. Unit observed to have been properly functioning with other sauces in well at 155*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection
