Inspector notes: Observed chlorine sanitizer concentration levels testing below the required 50-100 parts per million for the sanitizer at the dish washing machine. It was observed that the sanitizer bottle was empty at this time. The person in charge replaced the empty bottle with a full bottle of sanitizer. After priming the machine and running a couple of cycles, the sanitizer concentrations levels were measured between 50-100 parts per million according to the sanitizer testing strips. Discussed with person in charge to visually verify if the sanitizer bottles have chemicals in them and to promptly replace them once they are empty. Discussed with person in charge to regularly use testing strips to verify that the sanitizer is at the correct concentration. Food-contact surfaces were properly sanitized at time of inspection
