Inspector notes: Observed bone-in fried chicken breasts with final internal cook temperatures measuring between 138-150*F when measured with a probe thermometer. Cook did not use a probe thermometer to verify cook temps. Observed thigh and drumstick pieces fully cooked to 165*F or higher. PIC returned the chicken to the fryer for an additional two minutes and verified all pieces had been cooked to 165*F or above. All raw animal proteins must reach a final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Advised PIC to cook large pieces separately or add to the fryer before adding other pieces. Discussed fryers may be overcrowded and unable to reach temperature on larger pieces
