Inspector notes: Observed cooked mashed potatoes with internal temperature betwee 53-55F cooling in the reach in cooler by the front counter. The mash potatoes were portioned in plastic container with closed lids and on the bottom shelf of the reach in cooler. The person in charge stated the mash potatoes had been placed for cooling less than 6 hours ago and moved the food items into the walk in cooler uncovered for rapid cooling

Inspector notes: Observed cooked pork ribs in a hot insulated carrier underneath prep table at time of inspection. Ribs had an internal temperature of 115-120*F via probe thermometer at time of inspection. Explained to person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Recommended removal of hot insulated carrier from establishment because the intended purpose is to not hold at 135*F or above for a long period of time. PIC will use standing electric hot holding cabinet to store pork ribs
