Inspector notes: Observed pizza sauce in cold holding reach in unit near front of establishment reading between 46°F -53°F. Per person in charge, pizza sauce was prepped the day prior and put directly into unit to cool with lid. Pizza sauce was unable to reach 41°F within allotted time. Approximately 30 pounds of pizza sauce was embargoed per PIC. Discussed with PIC to put sauce into walk in cooler instead to ensure product reaches 41°F before entering prep unit. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection
