Inspector notes: Observed cardboard being used as a backsplash behind the front prep counter to the left of the cashier stand. The cardboard has dark grease and pizza sauce stains. Informed PIC that cardboard cannot be used as a facilities material due to its porous and absorbent structure making it non-cleanable. PIC stated that they will discard the cardboard and discontinue use of it for backsplash purposes. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection
