Inspector notes: Observed a speed rack in the walk-in refrigerator holding containers of cooked chicken that were covered in foil. PIC stated that the chicken was cooked yesterday evening. Per PIC, the chicken is taken out of the oven, sits on the counter for a small amount of time, then moved into the walk-in refrigerator, covered. Discussed uncovering any TCS food items as they are cooling, and monitoring cooling temperatures to ensure that the entire cooling process begins at 135F and drops to 41F within 6 hours. The container of chicken holding 48F was discarded, and the foil was removed from the other containers. The walk-in refrigerator is currently holding 37F and all other TCS food items are holding 37F
