Inspector notes: Observed active warewashing at low temperature mechanical warewashing machine dispensing chlorine concentration less than 50ppm. PIC adjusted sanitizer connection at time of inspection and observed chlorine concentration of 50ppm. Food-contact surfaces must be properly sanitized after washing and rinsing. Also observed test strips kept away from warewashing area, informed PIC to ensure test strips are readily accessible by staff so they can test sanitizer concentration regularly. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection
