Inspector notes: Observed cooked chicken drumsticks and cooked meatballs past 7 days datemarking in reach-in unit located opposite of cookline. PIC stated both items were frozen on day of prep and pulled from the freezer on the marked thaw date. Cooked chicken drumsticks observed with prep date of 08/17 and pulled date of 09/04; item was to be discarded by 09/09. Cooked meatballs observed with prep date of 09/05 and puled date of 09/08; item was to be discarded by 09/13. Suggested PIC to include discard date to ensure all staff can easily identify cooked food items that are past 7 days. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Provided datemarking guidance and General AMC (Active Managerial Control) Template via email. PIC was signed up for AMC Class scheduled on 09/24/24 at 08:45 AM MST. 3RD CONSECUTIVE VIOLATION
